Serves: 6
Ingredients
  • 6 apples
  • 1.5 cups white sugar
  • 90ml warm water
  • ⅛ cup glucose syrup
  • ½ tsp white vinegar
  • red food dye
Instructions
  1. Boil a large pot of water.
  2. Take your apples, and press in wooden skewers (make sure they don't poke through).
  3. Dip your apples into the boiling water for 20 seconds, then remove and rub with a clean dry tea towel to remove wax.
  4. In a saucepan, pour in the white sugar, warm water, glucose syrup and white vinegar.
  5. Stir until dissolved over medium heat.
  6. Bring to a boil (don't stir anymore) and continue boiling until the sugar syrup reaches 150C (heard crack stage).
  7. Remove from heat, and stir in enough red food dye to match the shade of red you want.
  8. Take your apple, tilt the pot, and dip and twirl the apple using the skewer to completely cover.
  9. Set aside to cool and harden on a baking rack, with baking paper underneath.
  10. (To clean up, boiling water removes all sticky sugar that might have gotten onto spoons, pots and counters).
