- 2 tbsp salted butter
- 1 medium onion, finely chopped
- 2 tbsp parsley
- 3 cups diced cooked potatoes
- Melt the butter in a frying pan and salute the onion, and parsley, sprinkling pepper on top.
- Once the onion is transparent, add the potatoes, and stirring constantly, cook until starting to turn golden in areas.
