- shortcrust pastry, cut and fitted into a mini tart pan
Filling
- 2 eggs, whisked
- 1 cup frozen peas
- 1/2 cup milk
- 1/2 cup fresh carrot juice
- 1/4 cup fresh basil, finely chopped
- 1 tbsp butter, melted
- 1/2 cup almond meal
- 1 small green apple, grated
- pinch of nutmeg
- 1/2 tsp cardamom
Instructions
- Combine all ingredients in a bowl.
- Preheat oven to 170oC.
- Scoop filling into pastry.
- Bake for 20 minutes
- Prep Time: 10 mins
- Cook Time: 20 mins
