Big PawPaw Salad |The Jungle Book

  • 1 red pawpaw/papaya
  • ¼ cup pistachios
  • juice of 1 lime
  • ¾ cup coconut milk
  • 1 can passionfruit pulp
  • 2 tsp white sugar (more or less based on taste)
  1. Skin the pawpaw with a potato peeler, scoop the seeds out of the middle, and slice into bitesized cubes.
  2. Place in a serving bowl.
  3. Pour over top the coconut milk, passionfruit pulp, lime juice and pistachios.
  4. Give it a good mix, then sprinkle the sugar all over the papaya, then serve.
