Peter Rabbit; Carrot & Peas Quiche

Ingredients
  • shortcrust pastry, cut and fitted into a mini tart pan
Filling
  • 2 eggs, whisked
  • 1 cup frozen peas
  • ½ cup milk
  • ½ cup fresh carrot juice
  • ¼ cup fresh basil, finely chopped
  • 1 tbsp butter, melted
  • ½ cup almond meal
  • 1 small green apple, grated
  • pinch of nutmeg
  • ½ tsp cardamom
Instructions
  1. Combine all ingredients in a bowl.
  2. Preheat oven to 170oC.
  3. Scoop filling into pastry.
  4. Bake for 20 minutes
