My mom made blue waffles and blue eggs for breakfast. She’s funny that way, celebrating special occasions with blue food. I think it’s her way of saying anything is possible. Percy can pass seventh grade. Waffles can be blue. Little miracles like that.

Whip up these easy blue waffle recipe straight from Percy Jackson and the Sea of Monsters

Sitting on the porch of my aunt’s rustic cabin, my eye catches the flash of a deer that breaks the morning light as it streams through the trees. I revel in the sun’s warmth and listen to the leaves rustling on the sky-reaching trees that draw the edges of the farm. Resting my feet on the porch railing, I plant my ipad firmly on my lap. Finally! Time to write and post.

That was the vision…the plan.

The reality? Eight families (my mom is the middle child in a family of nine) to visit in five days in Ontario. How I thought I’d have time for this vision of writing is beyond me!  The multi-family visit is like running a marathon. You love it, but you find yourself exhausted at the end of it all and a little….no, a whole lot sleep deprived.

After a whirlwind of five countries in five weeks, I’m sitting here a little jet-lagged and plain blue waffles is all I can manage right now! This posting is my second experiment with blue waffles, the recipe calling for blue food dye. My little blue miracle…

Ingredients
  • 1 cup self raising flour
  • 1 egg, beaten
  • 1 cup milk
  • 50g butter, melted
  • 2 tbsp white sugar
  • 2-3 drops of blue food colouring
Note
  • If using gluten free flour, add an additional ½ tsp of baking powder and warm the milk
Instructions
  1. Mix all the ingredients together and cook according to your waffle maker.
