I’ve never been without books. Growing up, mom always had the shelves filled, ceiling to floor.

Fortunately, as we got older, books weren’t sold or thrown away. In fact, all those rooms of books were boxed up and came across with us to Australia (where more were collected and added). One room in my parent’s place holds all the children’s books, and there’s nothing I love better than being able to sit in the dimly lit room and scour all those books I loved.

I came across Waiting For Whales recently, and remembering it, brought it out to read again.

Waiting For Whales | Watercress Soup

Ingredients

Units Scale
  • 2 tbsp butter
  • 2 cups watercress, washed
  • 1 tbsp soy sauce
  • 1 pinch salt
  • 3 cups chicken broth
  • 1 tsp sesame oil

Instructions

  1. Throw out the thicker stalks of the watercress, and only use the finer stalks and the leaves.
  2. Cook all the ingredients together until the leaves are soft, then puree before serving.
  • Cook Time: 8 mins
