Duck in Orange Sauce | Me Before You
Jump onto Instagram, and you’ll see every YA book lover is getting hyped over ‘Me Before You’. It’s expected to be out in cinemas June 3rd 2016, so we’re prepping this duck in orange sauce recipe for a dinner party before the movie premiere.

Duck in Orange Sauce | Me Before You

Ingredients

- 1 tbsp butter
- 2 pieces duck breast
- 2 tsp white sugar
- 1/2 cup white wine
- 2 tbsp vinegar
- 1 1/4 cup chicken stock
- juice of 1 orange
- rind of 2 oranges
Instructions
- Clean, pat dry the duck, then score the skin.
- In a frying pan, add the butter and braise the duck breast for 4 minutes.
- Place the duck breast in a roasting pan.
- Turn the oven on to 200oC and set the duck inside the oven to keep warm, as the oven warms up.
- In the frying pan, add to the braising liquid the sugar, white wine, vinegar, and chicken stock.
- Stir and let boil for several minutes.
- Boil some water in a kettle or on the stove, and plunge the orange rind in.
- To the frying pan, add in the juice of one orange and let it boil.
- By this point the oven should be warmed, so remove the duck. Pour the liquid over the duck breast, and take half the orange rind and add in.
- Roast the duck in the oven for 15-20 minutes. The last 5 minutes or so, turn the oven broiler on to create a golden top.
- Remove and place the on plates. You can either pour the orange sauce over the duck, or serve on the side in a small bowl.
- Top with the additional orange rind and serve
