Dr Seuss’ What Pet Should I Get Animal Cookies
Having a new Dr Seuss book come out is like having all the holidays all at once. Overload of absolute un-contained excitement! This is a rare happening (I think one more manuscript may have been found?) so I needed to celebrate. When I think of growing up, I think of those animal cookies from President’s Choice (in Canada). These unfortunately don’t taste like them (or maybe it’s the texture?). But that’s ok- they’re still a super tasty cookie. What makes them special is cutting them out in Dr Seuss character shapes, like the fish or the cat. So don’t forget to watch the video on how I made them!

Dr Seuss’ What Pet Should I Get Animal Cookies
Ingredients
- 1 1/2 cups plain flour
- 1 cup oat flour
- 1 tsp. baking powder
- dash of salt
- 1/4 tsp. ground nutmeg
- 170g | 1 1/2 sticks soft butter
- 1 cup white sugar
- 1 egg
- 1 tsp. vanilla extract
Instructions
- In a mixer, beat the butter for a few minutes until creamy.
- Add in the white sugar and beat for another few minutes, then add in the egg and vanilla.
- Add in the flours, then the baking powder, salt and nutmeg.
- Keep mixing until it starts to pull itself into a dough lump.
- Turn out onto cling wrap, cover and place in the fridge for an hour.
- Once chilled, preheat oven to 175C | 350F.
- Roll out onto a dusted with flour board.
- Cut out using your cookie cutter.
- Place on baking paper lined cookie trays and bake for 10-15 minutes, watching for when they turn golden.
- Remove, cool and serve.
